Job Description:

We're looking for a skilled Sous Chef to run daily kitchen operations, manage the back-of-house team, and assist the Chef de Cuisine in running a fiscally responsible kitchen. The ideal candidate will embody our brand's commitment to trusty service standards and delicious, reliable meal service.
Located on Central Avenue in Downtown Albuquerque, ARRIVE Albuquerque is a beautifully renovated historic hotel and neighborhood hub. Originally built in 1965, this 137-room boutique hotel is bright and comfortable, with a modern southwestern-inspired charm.
The Sous Chef will support the Chef de Cuisine by ensuring labor and food cost targets are met. They will run an efficient, productive, and professional kitchen on a day-to-day basis. They will create a daily log to effectively communicate with the Chef de Cuisine, Director of Restaurants, and other colleagues.
The Sous Chef will develop a passionate and effective kitchen brigade that embraces all food preparation standards through hands-on education and positive encouragement. They will ensure the quality and consistency of all dishes prepared and served in the restaurant. They will supervise all food preparation and presentation to ensure it's in line with restaurant standards.


  • Supporting the Chef de Cuisine by ensuring labor and food cost targets are met.
  • Running an efficient, productive, and professional kitchen on a day-to-day basis.
  • Creating a daily log to effectively communicate with the Chef de Cuisine, Director of Restaurants, and other colleagues.
  • Developing a passionate and effective kitchen brigade that embraces all food preparation standards.
  • Ensuring the quality and consistency of all dishes prepared and served in the restaurant.
  • Supervising all food preparation and presentation to ensure it's in line with restaurant standards.
  • Working collaboratively with all restaurant and hotel teams to ensure productivity and a fabulous guest experience.
  • Embracing and abiding by all corporate SOPs as well as state and local labor laws.
  • Learning the entire menu inside and out, so you're able to describe, create, and train other kitchen staff on preparation and flavor profiles.
  • Carrying out all tasks in a reasonable time frame to ensure the smooth running of the areas.
  • Using a keen eye to monitor restaurant standards in both food preparation, storage, kitchen cleanliness, dish composition, and general maintenance of kitchen equipment.
  • Consistently complying with food labeling and temperature protocols.
  • Demonstrating a keen interest in the industry as a whole and a passion for keeping up with current trends.
  • Communicating clearly, professionally, and concisely whilst actively listening to others and giving careful consideration to their needs and opinions.
  • Collaborating with and helping to new team members, offering support, advice, guidance, and encouragement when applicable.
  • Ensuring product consistency and quality is being maintained.
  • Supervising service to ensure the appearance and taste of all food is in line with restaurant standards.
  • Assisting the Chef de Cuisine and in menu creation.
  • Supporting the management team to ensure targets are met with labor and food costs.
  • In the absence of the Chef de Cuisine, managing inventory and stock ordering.
  • Supervising of the kitchen cleaning schedule.
  • Ensuring all cooks are properly using prep lists and maintain 'First In First Out' method.
  • Understanding the functional administration of the restaurant, i.e., docket procedures, stations, table numbers, food labeling etc.
  • Learning the full menu, and able to give a detailed description of dish composition.
  • Ensuring all kitchen employees are taking their respective breaks on time with the permission of the chef in charge.
  • Monitoring restaurant standards with menu specification.
  • Helping with the development of skills within the team.
    The ideal candidate will have a minimum of 2 years of experience in a similar position. They will be able to stand and walk throughout their shift, lift and carry up to 30 lbs, kneel, push, and pull. They will have a flexible schedule and be available to work a variety of shifts including weekends and holidays.
